Weeknight Dinner: Crispy Chicken Tenders with Brussels Sprouts

Did you know that it’s “Brussels sprout” not “Brussel sprout?” I learned that in the making of this recipe because I couldn’t figure out why I kept getting the red dotted line under “Brussel sprouts.” Either way you type it, this is a yummy healthy homemade weeknight meal.

Weeknight Dinner: Crispy Chicken Tenders with Brussel Sprouts

Makes 4 servings, approximately 2 tenders each so double or triple this recipe if you are serving more people.

Ingredients for chicken tenders

  • ¾ cup corn flakes

  • 1 tsp. garlic powder

  • 1 tsp. ground paprika

  • ½ tsp. salt

  • ½ tsp. ground black pepper

  • 1 lb. raw chicken breast tenders

  • 1 tsp. olive oil

  • INGREDIENTS FOR BRUSSEL SPROUTS
  • 3 cups sliced brussel sprouts

  • Salt to taste

  • Spray olive oil

Directions

  • DIRECTIONS FOR CHICKEN TENDERS
  • Preheat oven to 375° F.
  • Line small baking sheet with parchment paper. Set aside.
  • Place cereal, garlic powder, paprika, salt, and pepper in a food processor or blender. Pulse until cereal is finely crushed; transfer to bowl
  • Brush chicken with oil or use a spray olive oil; press each piece into cereal mixture, coating on all sides.
  • Place chicken on baking sheet; bake for about 15 to 18 minutes, or until golden brown and crispy.
  • Serve with your favorite dipping sauce.
  • DIRECTIONS FOR BRUSSEL SPROUTS
  • If not already done, cut Brussels sprouts in half and place in microwave-safe bowl
  • Spray evenly with olive oil, toss to coat
  • Place bowl of sprouts in microwave, covered, for 2-3 minutes
  • Add microwaved sprouts to the same sheet as the chicken tenders, sprinkle with salt
  • Bake with tenders
